Black Sesame Dessert Soup

This popular, traditional Chinese dessert is actually fairly easy to make. There are four ingredients plus some time and patience. This recipe is sure to impress the parents, grandparents and in-laws! This recipe works best with a high powered blender (blender with 2+ horsepower), I use the Vitamix Series 300.

Serves 6
Prep time 1 hr
Cook time 30 min

1 cup of uncooked white rice (wash first and soak for 1 hr)
1 cup of roasted black sesame seed
7.5 cups of water (2.5 cups cold water, 5 cups hot water)
1 cup of brown sugar

Roast the black sesame seeds in a pan over medium heat for 3min, stir to keep from burning. Lower the heat and roast for another 3 min, keep stirring.  You should smell the fragrant sesame aroma. *Note: Even though the black sesame seeds I use is pre-roasted, I still roast over the stove to bring out the fragrant flavour.  Once done, put in the Vitamix blender with 1 cup of water and blend turning up slowly to on high power (level 10) for 30 sec.

Add the rice and 1 cup of water and blend for 45 sec until sesame seeds and rice is ground up. Transfer to large fry pan over medium heat and add the hot water 1 cup at a time stirring it in.  Cook for 15-18 min, or until the rice is cooked, stirring to keep from burning. Add the sugar.  You can add a bit more water depending on your thickness preference. You will know the rice is cooked when you see small specks of cooked white rice.

Let it cool and clean the blender to ensure raw rice isn't incorporate into the cooked dessert. Transfer dessert back to the blender to blend for 45 sec. pour into bowls and serve.
You can store this for 3-4 days in the fridge.  Add a little bit of water to reheat or enjoy it cold.
Roasting black sesame seeds

First, blend the black sesame seed with 1 cup of water,
then add rice grain and 1 cup of water and blend

The dessert will start off chunky but will smooth out as you add the water to the mixture
