Hawaiian Loco Moco



Loco Moco is a Hawaiian lunch plate. It's essentially a hamburger beef patty served with gravy and rice and a sunny-side-up egg (or over easy if you prefer).

4 hamburger patties 
4 eggs
1 1/2 cups canned beef broth or homemade chicken stock
1/2 tsp salt
1/2 tbsp soy sauce
1 tbsp oyster sauce
1/4 tsp Worchestershire sauce
Steamed white or brown rice
Green onions, diced
Sliced tomatoes
1 tbsp Corn starch and 1/2 tbsp water combined in a bowl

Cook white rice or brown rice in rice cooker. I use the Cuckoo rice cooker which has a pre-set germinating time to cook brown (gaba rice). 

Grill hamburger patties or cook in a pan. I use the Debuyer carbon steel pan for this recipe -- this pan gives any meat a very nice grilled taste. Once fully cooked, place the patty on plate next to or on top of the rice. 

Next, use 1 1/2 cups chicken stock to make the gravy. Heat the stock over the stove in a sauce pan. Add the salt, soy sauce and oyster sauce, lower the heat once it starts to boil, and stir in cornstarch/ water mixture and stir to avoid clumping. 

Fry egg over medium high heat, prepare either sunny-side up or over easy as you prefer. The runny egg yolk complements this dish very well, so be sure to not overcook the egg. Place on the plate either next to or on top of the beef patty.  Pour the gravy over the rice and patty and sprinkle some green onions on top.

Serve with sliced tomatoes on the side.
