Steamed Ground Pork with Shiitake Mushrooms and Water Chestnuts


If there was ever a staple Chinese home-style comfort dish, this would definitely be it! Reminiscence of childhood, I prepare this quick-to-make dish with a side of Chinese broccoli and winter melon soup on a gloomy winter day and it truly warms my tummy! 😊

Serves 2

Prep time 5 min + 1 hour to soak mushrooms
Cook time 18-20 min

250 gr extra lean ground pork
4-5 medium-size shiitake mushrooms
2-3 water chesnuts, diced
2 green onion bulbs, diced
1/2 tbsp soy sauce
1 tbsp mirin
1/2 tbsp oyster sauce
3/4 tsp sugar
1/2 tsp ground pepper
1/4 tsp salt

Wash the mushrooms and remove their stems. Place them in just enough water to cover the mushrooms, leave them soaking for 1-2 hour. Dice the mushrooms and set the water it was soaking in aside. The mushrooms have steeped the water and it's great to use as it adds additional flavour to a dish.

In a bowl suitable for steaming, put the soy sauce, oyster sauce, pepper, mirin, sugar in with the ground pork and mix together. Add the diced mushrooms and water chestnuts and place in a bowl into a steamer (see below). Add 2 tbsp of the water the mushroom was soaked it to the dish.

Steam for 15-18 min until the pork is fully cooked. Once cooked, sprinkle the green onions on top and add a bit of salt and pepper to taste. Keep the lid on for another 1-2 min.
Serve with Shanghai bak choy and white or brown rice.
