Baked Sweet Potatoes with Egg

2 sweet potatoes
1/2 small red onion, sliced thinly
1 Chinese sausage or other sausage meet like kolbasa 
Green onion, diced
Baby spinach 
4 eggs, optional
Preheat oven to 400 F. Peel the sweet potatoes and cut in half. Brush a thin layer of extra virgin olive oil over the whole thing and place face down in the oven. Bake for 35-40 min until soft. 
Take out of oven and scoop some of the potato out of the centre out with a spoon. Sprinkle the two types of onions, baby spinach and meat in and bake for another 8 min. 

For brunch or if you just love eggs like I do, fry the eggs in a pan and cook sunny side up or over easy to your liking. Place an egg over each of the sweet potato halves and serve immediately with a side arugula salad or carrot soup
