Fresh Shrimp with Garlic Butter

If you're lucky enough to live near an ocean, you enjoy the luxury of access to fresh shrimp regularly. The shrimp we get in Toronto is always frozen and so when we visit Hawaii, I love getting fresh Kauai shrimp from the market  to make for dinner. My favourite dish is shrimp with soy sauce, roasted green onions and garlic dipping sauce but this recipe is a close second.  Try both and let me know what you think!

Cook time 12 min

2 tbsp butter
1 garlic bulb, minced
1 lb fresh shrimp, head on*, rest of the shell removed and de-veined
Sea salt and fresh ground pepper to taste
1-2 lemon wedges

*I leave the head on as it gives the dish more flavour. Once it's cooked, you can remove it before serving the shrimp.

Wash shrimp and remove the shell and tail (optional: leave the head on) proceed to de-vein by cutting along the back, just enough to remove the 1-2 inch vein.

Melt the butter in a large fry pan over medium heat, add the garlic and fry for 4-5 min on low heat, making sure it doesn't burn. Add the shrimp and cook for 8 min covering it for the last couple of minutes.  Be sure not to overcooked the shrimp. They start to curl up and the meat turns from grey to pink once it's cooked. Add some salt and pepper and squeeze 1-2 lemon wedges over the shrimp.

Serve immediately as an appetizer or as a main with your favourite carb and veggie dish.
