Chicken with Mushroom Stew


Serves 2-3

Cook time: 3 hrs 45 min

4-5 chicken thighs
2 Portobello mushrooms, sliced

10 cremini mushrooms, sliced
1 small onion, sliced
2 green onions roughly chopped
½ tbsp olive oil
1 tsp fresh ground pepper
3 tsp sea salt
1 tsp fresh ground pepper
3 garlic cloves, minced
2 cups of water

In a medium-sized enameled cast iron pot, heat the oil over medium-high heat. Place the thighs into the pot, browning for about 4 min on each side.  Remove thighs and discard excess oil.  Add the onion, green onion, garlic and cook for 3 min, add all the mushrooms and cook for 3 min.  Place the chicken back in the pot along with the water and simmer for 3 ½ hr on low heat until the chicken falls off the bones.

Serve with steamed white rice. I served it with brown and black rice mix. Recipe to come soon! :)
