Matcha Popsicles


When I posted matcha popsicles on my Instagram feed (@bappygirl) as a breakfast option, I got a number of questions and "odd looks" - "popsicles for breakfast?!", "hmmm..??"
People were extremely curious about what a breakfast popsicle would be. Well, it's actually very simple - yogurt is the "secret" ingredient! 
Yogurt + caffeine + some honey and almond extract - nothing unhealthy about any of it!!  

I've included 2 recipe variations, one made with plain Greek yogurt and one made with vanilla Greek Yogurt. I know most people have strong preferences when it comes to which yogurt they will eat. Some only have plain yogurt for breakfast and others prefer some fruit or vanilla flavour to sweeten the yogurt.  

The recipe with vanilla yogurt is creamier and sweeter and the one with plain yogurt highlights the yogurt and matcha flavour a little more, giving it a sour and bitter taste. Try both and let me know what you think! 

Makes 4-6 popsicles
Time: 5 min, plus 3 hrs to freeze the popsicles

Recipe 1:
1 1/2 cup plain Greek yogurt 
1 tbsp matcha powder, sifted and diluted in 4 tsp of hot water
2 tbsp honey
1/2 tsp almond extract or vanilla extract

Recipe 2:
1 1/2 cup vanilla Greek yogurt  
1 tbsp matcha powder, sifted and diluted in 4 tsp of hot water
1 tbsp honey, more if you like it sweeter
1/2 tsp almond extract


Sift the matcha powder with a small sieve and dilute it in hot water in a bowl. Whisk, preferably with a matcha brush until the powder is completely diluted.

Place all of the ingredients in a blender and mix for 1 minute.
Place in popsicle molds and freeze for 3 hrs before eating.
