Korean Dried Spicy Radish Banchan

Muumalingi  (무말랭이무침is a Korean Dried radish banchan served with a meal. It's got a crunchy texture and spicy/salty umami taste.



1 1/2 cups water 
1 1/2 tsp soy sauce
1 1/2 tsp brown sugar
200 g dried packaged radish (dehydrated), soaked in water for about 20-30 min to soften
2 tsp sweet rice flour (mochiko) 
2 tbsp + 1 tsp Gojujung 
2 1/2 tsp fish sauce 
1/3 cup gochugaru (Korean chili flakes)
1/2 tsp sesame oil 
1 tsp sesame seeds
1 1/2 tbsp minced garlic
1 1/2 tsp honey
3 tbsp soy sauce 

Soak the radish in water for about 20-30 min until soft. If it’s not soft enough, it may soak up the marinade sauce. Drain the water.

In small pot, heat 1/3 cup of water and add 2 tsp sweet rice flour. Simmer for 5 min.
Add the Gojujung, fish sauce, Gojugaru, sesame oil, sesame seeds, garlic, honey and soy sauce and stir together until warm. 

Cover the dried radish with the marinade and let it sit for 1 + hr. Chill and serve.
