Fluffy Matcha Pancakes


Serves 2-3

1 cup all-purpose flour
1/2 cup almond flour 
1 tbsp matcha powder 
3 1/2 tsp baking powder
1/2 tsp sea salt
1 tbsp white sugar
1 1/4 cup milk
1 egg 
3 tbsp salted butter, melted plus 3 tbsp for cooking
Maples syrup and fresh diced strawberries to serve with pancakes 

Sift the flour, matcha powder and baking powder into a large bowl, add salt and sugar and mix. 

Beat the egg with a hand whisk in a separate bowl. Add the milk and melted butter and whisk to incorporate. 

Create a well-like opening in the middle of the dry ingredients and pour the liquid mix in. 

Use a hand whisk to combine everything - careful not to over mix as it will lead to non-fluffy pancakes. 
Let the batter sit for 30 min or so, until small bubbles form on the surface of the batter.

Turn heat to medium, add some butter to frying pan, Scoop the thick batter onto the pan to form nice round pancakes.  

Flip the pancakes over when you see that some bubbles have formed on the surface. These are thicker pancakes and may take some time to cook through. They take approx. 8 min for me, flipping them over a few times.

Serve pancakes with maple syrup and fresh strawberries.
